Vegetable Fajitas

Ingredients

1 tbsp oil
1 red onion
1 red pepper, sliced
1 yellow pepper sliced
1 green pepper sliced
6 medium mushrooms, sliced
1 small can kidney beans drained
1 tbsp fajita seasoning
Flour tortillas
Salad, sour cream and grated cheese to serve

Method

  1. Preheat the oil in a frying pan and add all the vegetables and fry until softened .
  2. Add the kidney beans and fajita seasoning, fry for 1 to 2 minutes and serve with the tortillas
  3. Warm the tortillas in the microwave for a few seconds.
  4. Wrap the cooked vegetables in the tortillas, together with sour cream and/or grated cheese. Serve with salad.
